Evangela's Extravagant Apple Pie (Ha! Ha!)

  • Ingredients for apple pie filling: 
6 cups of sliced apples (we slice about 7 apples with an apple slicer and then cut the apple slices in half to make them thinner. Another way to do it is to slice the apples with the slicer and then chop them a couple times.)
1 cup of sugar
1 tbs of SR flour
4 tbs of softened butter
2 tbs of cinnamon
2 tbs of nutmeg
  • Mix ingredients together and set aside.
  • Ingredients for apple pie crust:
2 cups of AP flour
2/3 cup of shortening or lard
1 cup of cold water

Put flour into a large bowl. Then cut in shortening until the pieces are the size of small peas. Once that is done gradually add the cold water by teaspoons (one tsp at a time) tossing the dough gently with a fork until all is moistened. Then divide the dough into two pieces. 
  • On a lightly floured surface, flatten one ball of dough with hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around rolling pin and unroll onto a 9 inch pie dish. Trim pastry even with rim of pie plate.   
  • Then dump your apple pie filling into the pie dish and roll out the remaining dough then put the dough over the filling and cut slits into the crust. You can either trim the remaining dough and flute the edges or as I like to do, trim the edges by pinching the dough against the pie dish and then use a fork to press a "line" design around the edges.   
  • Heat oven for 375 and cook for 40 minutes.                 

Gabby's Great Granola Bars   

  • Ingredients: 
3/4 cups of brown sugar

2/3 cups of peanut butter
1/4 cups of butter
1/2 cups of honey
1 tsp. of vanilla extract
  •  Mix together in large bowl then add:

3 cups of oats
1/2 cup of raisins 
1/2 cup of chocolate chips
1/2 cup of coconut 
1/4 cup of sesame seeds
Add sunflower seeds and ground flax seed as needed.
  • Mix together throughly and then press onto a baking sheet and put into the oven.


  • Cook on 350 degrees for 40 minutes.
